Fox Premieres on iTunes

I read that Fox network is going to be offering their season premieres free on iTunes and I have to admit that I dont’ know squat about iTunes so I did a bit of looking. I saw that the iTunes software can be had for mac or pc, so that much is solved.
The other question is how much of a pain is it to convert video content downloaded from iTunes to other formats such as XviD video + MP3 audio in an .AVI container? I did some quick searching and because iTunes is one of the keywords the search results are all focused on moving stuff TO iTunes instead of converting FROM iTunes TO .AVI
